For 15 years, Víctor Manuel has lovingly tended to his 16,000 coffee plants, aged six years, boasting the renowned Castillo and Colombia varieties. Harvested in the second semester, the beans undergo natural and honey processing, enhancing their unique flavors.
With 25 hours of pre-fermentation and solar marquee drying for 600 to 720 hours, the result is exceptional quality coffee. Though lacking certifications, Víctor Manuel's commitment to sustainability is evident in manual weed control and chemical-free practices.
Beyond his remarkable craft, Víctor Manuel's dedication to community shines through. Alongside his wife Mónica Mariño, they support their local area by maintaining roads, organizing lighting, and even cleaning the streets.
